Pomegranate Blueberry Smoothie

Pomegranate Blueberry Smoothie is a perfect pick me up drink full of antioxidants from the blueberries and pomegranates. Pomegranate is a seasonal fruit. To save money, in late autumn (October-November) I buy pomegranates in bulk and freeze them. Later, I use them in fruit salads, desserts and of course, in my favourite smoothies. Pomegranate seeds can be stored in a covered container in the fridge for several days. They also freeze well, so you can place them in a freezer bag or container and freeze for several months.

You can freeze the whole pomegranates, but I prefer to freeze just seeds. It saves me a lot of space in the freezer and, more importantly, they are ready to use when I need them. I can throw a handful of frozen pomegranates into the blender and my smoothie is ready in no time. Yes, seeding bunch of pomegranates is messy and time consuming but in the long run, I think it’s worth it. If you freeze the whole pomegranates, you will have to thaw it first and then seeded.

Ingredients:

  • seeds from 1 large pomegranate
  • 2 bananas (peeled and frozen)
  • 1 cup blueberries or blackberries
  • 1 cup milk (I use regular 2% but you can use any milk you like)
  • 1 tablespoon honey

Mix in your blender until creamy and smooth. Pour into glasses and serve. For garnish, add blueberries or blackberries on top.
