Pasta with Strawberries – Kluski z Truskawkami

Pasta with strawberries or kluski z truskawkami was always a big hit in our home every summer. A quick, simple and delicious dinner done with only few ingredients. We didn’t have air conditioner when growing up, so during hot summer days pasta with fresh strawberries, which is always served cold, was a perfect meal. There is no quicker, easier summer dish, and at the peak of the strawberry season, it’s also very budget friendly.

This dish brings back a lot of nostalgic memories. To this day I still make it the way Mama used to make.

Ingredients

  • 4 cups of fresh strawberries
  • 450 grams pasta of your choice (I like Rotini for this dish)
  • 3 tablespoons sour cream or greek yogurt
  • 2 tablespoons sugar

Step by step instructions:

Step 1

First wash the strawberries thoroughly, remove the stems and cut into smaller pieces. If you have frozen strawberries, thaw them first and then slice them. Leave a few strawberries aside, for a garnish.

There are three options to mash strawberries. You can do it with fork, potato masher or a blender. I like to do it with potato masher so the sauce is chunkier, not too creamy and has a nice texture.

Step 2

Put halved strawberries into bowl. Add sugar and mash together. It’s up to you how finely you want. Instead of sugar, you can use honey.

Step 3

Add 3 tablespoons of sour cream or greek yogurt.

Step 4

Mix it well until strawberries and sour cream are fully combined.

Step 5

In the meantime cook your favourite pasta. I like Rotini because the twists of the noodles keep the sauce from rolling off the edges. Transfer the cooked pasta to a colander and let is cool.

Pour the strawberry sauce over cooked cool pasta. Garnish with fresh strawberries and dinner is ready.
