In my family everyone loves blueberry muffins. Mama Maria is a health fanatic. She loves her garden and she grows most of her veggies in her backyard. When it comes to cooking, everything is healthy and fresh. I love visiting my in laws, not only because I truly love them, but also because we all spend a lot of time in the kitchen, cooking delicious food together, talking and having really good time. I try to learn from Mama Maria as much as I can, about Portuguese culture, tradition and amazing cuisine.
Here is Mama’s Maria recipe for Blueberry Bran Muffins.
Ingredients:
- 1 1/2 cups Natural wheat bran
- 1 cup fresh blueberries
- 2 tablespoons honey
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 2 cups Rhubarb jam or apple sauce
- 1 egg, lightly beaten
- 1/2 teaspoon vanilla
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon raisins or dates
- 1 tablespoon cinnamon
Directions:
- Preheat oven to 375 °F (190 °C)
- In a large bowl, combine bran and buttermilk, let stand 5 minutes
- Stir in vegetable oil, blueberries, Rhubarb jam, beaten egg, cinnamon and vanilla
- In a separate bowl, whisk together flour, baking soda, baking powder and salt
- Add to bran mixture and stir
- Gently fold in raisins or dates and spoon into lined muffin tin
- Bake 15-20 minutes
- Let is stand for 10 minutes

If you don’t have fresh blueberries, you can use dried apricots or dried cranberries. Sometimes Mama adds sunflower or pumpkin seeds to make it even healthier.
