Mushrooms are very important in Polish cuisine. We use them in soups, hunter’s stew aka bigos (see Mama’s recipe), polish dumplings (pierogi) and many, many other dishes. Poland is the largest producer of mushrooms in Europe. I personally love them in any form, especially in soups and sauces.
Here is Mama’s Barb famous and super simple mushroom sauce recipe. I hope you like it:
Ingredients:
- 2 lbs (1 kg) fresh mushrooms (sliced)
- 1 large onion (coarsely chopped)
- 2 tablespoons butter
- 1 cup 30% heavy cream
- Salt and pepper to taste
Step by step instructions:
Step 1
First, wash and clean all mushrooms and slice them (any size you like). Chop the onion.
Step 2
In a medium saucepan, melt the butter and sauté mushrooms with onions until fully caramelized. Add pinch of salt and pepper.
Step 3
Next, slowly add heavy cream. Simmer for about 4 to 5 minutes.
Alternatively, if you use low fat sour cream, you will need to temper it to prevent the cream from curdling when added to hot mushrooms. In a separate bowl, slowly add one cup of the hot water to the sour cream whisking constantly.
Slowly pour in the cream mixed with the water into the pan stirring constantly to prevent lumps from forming. The sauce should be creamy and silky.
Simmer on low temperature for 8-10 minutes.
Pour over your favourite pasta, mashed potatoes or chicken breasts. Enjoy.
